\nAccording to the U.S. Census Bureau, the county has a total area of 1,488 km² (575 mi²). 1,454 km² (561 mi²) of it is land and 34 km² (13 mi²) of it is water. The total area is 2.29% water.

census2 of 2000, there are 78,021 people, 29,066 households, and 21,886 families residing in the county. The population density is 54/km² (139/mi²). There are 32,718 housing units at an average density of 22/km² (58/mi²). The racial makeup of the county is 89.08% White, 0.95% Black or African American, 0.53% Native American, 0.46% Asian, 0.03% Pacific Islander, 6.98% from other races, and 1.96% from two or more races. 22.57% of the population are Hispanic or Latino of any race. There are 29,066 households out of which 33.30% have children under the age of 18 living with them, 62.80% are married couples living together, 9.00% have a female householder with no husband present, and 24.70% are non-families. 20.60% of all households are made up of individuals and 9.00% have someone living alone who is 65 years of age or older. The average household size is 2.64 and the average family size is 3.05. In the county, the population is spread out with 25.50% under the age of 18, 7.00% from 18 to 24, 27.50% from 25 to 44, 25.20% from 45 to 64, and 14.80% who are 65 years of age or older. The median age is 39 years. For every 100 females there are 96.00 males. For every 100 females age 18 and over, there are 93.20 males. The median income for a household in the county is $46,147, and the median income for a family is $52,455. Males have a median income of $36,048 versus $25,940 for females. The per capita income for the county is $21,914. 8.60% of the population and 6.40% of families are below the poverty line. Out of the total people living in poverty, 11.50% are under the age of 18 and 7.30% are 65 or older.
