Jelly fungi comprise three orders: Tremallales, Auriculariales, and Dacrymycetales. They are so named because their mushroom is the consistency of jelly. When dried, jelly fungi become hard and shriveled; when exposed to water, they return to their normal shape. Poisonous jelly fungi are rare, but many are not of a texture or taste that one would want to consume. A number of them are edible raw; however, they are not generally targetted in mushroom hunting due to their taste, which is typically similar to the taste of dirt.
