In Indian cookery, Panch Puran is a mixture of equal parts of five different whole spices. "Panch" means five in Hindi. The spices are;
- Fenugreek (methi)
- Kalonji This is something like onion seed. (Please correct if wrong!)
- Mustard Seed
- Fennel Seed
- Cummin Seed
The whole seeds are usually fried in oil or ghee before adding potatoes or other vegetables.
