Sparta is a town located in Livingston County, New York. As of the 2000 census, the town had a total population of 1,627.

The racial makeup of the town is 96.62% White, 0.68% African American, 0.43% Native American, 0.86% Asian, 0.00% Pacific Islander, 0.25% from other races, and 1.17% from two or more races. 0.43% of the population are Hispanic or Latino of any race. There are 595 households out of which 30.9% have children under the age of 18 living with them, 66.7% are married couples living together, 6.7% have a female householder with no husband present, and 22.2% are non-families. 15.8% of all households are made up of individuals and 6.4% have someone living alone who is 65 years of age or older. The average household size is 2.73 and the average family size is 3.03.
