Mizithra is a greek goat cheese similar to Romano in taste and consistency, and not unlike the familiar greek feta cheese. It has a somewhat bold buttery, salty taste. It can be used in a fresh and soft state or when aged and hard. The later form is grated for use as a food topping. Mizithra cheese was reportedly popular in ancient times.
